| Spring/Summer Soups: Tuesday, June 10, 2:00-4:00 pm | ||||
| Soup is good food and when you leave this class, you'll know why. You will prepare a variety of hot and cold soups, including seasonal favorites like a cold strawberry soup and asparagus bisque. You'll also sample your own and your classmate's results and learn how to attractively present your creations. | ||||
| Fresh Salsas, Chutneys, and Relishes: Tuesday, June 17, 2:00-4:00 pm | ||||
| Southwestern Michigan's fresh produce can create an amazing number of salsas, chutneys, and relishes. With a fresh fruit or vegetable base and a variety of spices, you'll be amazed at what you can create. As you learn the skills to craft these accompaniments, you'll also learn about the subleties of flavor as you sample your own and your classmate's efforts. | ||||
| Gourmet Picnic Baskets: Tuesday, June 24, 2:00-4:00 pm | ||||
| This class will help you move your picnic beyond ham sandwiches and chips. You will learn new twists on old favorites, like potato salad and chicken salad. You may be surprised that less work means a better impression. We also discuss food safety and how to pack your picnic basket. | ||||
| Grilling Extravaganza: Tuesday, July 1, 2:00-4:00 pm | ||||
| If you can eat it, you can grill it, and in this class we explore new versions of grill standards, like chicken and ribs, and venture into new territory with sauces and rubs. We'll also discuss basic techniques that will help ensure success every time you step up to the grill. | ||||
| Chocolate, Candies, and Decorations: Tuesday July 15, 2:00-4:00 pm | ||||
| Indulge your own sweet tooth or learn skills to treat someone else. You will learn to master truffles, caramels, and pralines. You'll also create a chocolate centerpiece that will not only be visually stunning, but also edible. | ||||
| Summer Pies and Tarts: Friday, July 18, 2:00-4:00 pm | ||||
| Summer doesn't begin and end with just an apple pie, you know. Southwestern Michigan is home to one of the most bountiful fruit belts in the world. In this class, you will not only learn to overcome your fear of working with pastry, you'll also work with a variety of local fruits. | ||||
| Cake Decorating: Tuesday, July 29, 2:00-4:00 pm | ||||
| Learn how to turn an everyday cake into a showstopper worthy of any special occasion. You will learn how to work with a variety of frostings and practice piping techniques. | ||||
| Fruit and Vegetable Garnishes and Displays: Friday, August 1, 2:00-4:00 pm | ||||
| Learn how to artistically serve Southwestern Michigan's bountiful produce in this class. You will learn cutting and display techniques and create a fruit and vegetable masterpiece. | ||||
| Cooking With Fresh Herbs: Tuesday, August 5, 2:00-4:00 pm | ||||
| Cash in on your green thumb by learning how to use your homegrown herbs. We discuss harvesting and storing your herbs and use fresh herbs to create a variety of sauces, dips, and main dishes. | ||||
| Summer Salads: Friday, August 8, 2:00-4:00 pm | ||||
| Forget the iceberg lettuce; the best salads rely on flavorful and nutritious local produce, and where else can you find better local produce than Southwestern Michigan? In this class, you can prepare a variety of salads, including side dish salads and those that can be served as an entree. | ||||
| Vegetarian Cuisine: Tuesday, August 12, 2:00-4:00 pm | ||||
| Vegetarianism can be a tasty (and healthy) way of life, if you know how to create a variety of dishes. You will learn more about vegetarian cuisine and try your hand at an assortment of recipes, sampling your own and your classmate's results. | ||||
| Kids Culinary Camp: Tuesday & Wednesday, August 19 & 20, 2:00-4:00 pm | ||||
| Do you have a mini Emeril (or Chef Tim) at home, who would enjoy hands-on culinary experience? Participants in this 2-day camp will learn a range of techniques while creating treats and snacks. They'll also enjoy a variety of demonstrations, which we're sure they'll beg to try at home. | ||||
| Pastas and Sauces: Tuesday, August 26, 2:00-4:00 pm | ||||
| Very few dishes are as easy to prepare and yet as extremely satisfying as pasta. You will learn how to cook pasta to perfection and create sauces to complement any occasion. | ||||
